Barbecued Pork Tenderloin
We recommend cooking pork
at a high temperature for a
short period of time, then
letting it rest before serving, to
ensure that it is well-cooked
but not dry. Pictured below is
a pork fillet served family style
with
Lentils and Curried
Cream Sauce.
Ingredients:

Pork Filet
1 whole - approx. 3 pounds
 
Homemade Barbecue Sauce
1 pint
 
  1. Preheat oven to 450°.  Place pork filet(s) in baking or roasting dish.
  2. Spread Canned Barbecue Sauce over filets.
  3. Roast for 15 minutes.  
  4. Turn the filets and baste them.  
  5. Roast 15 more minutes or until they reach 140 degrees with a meat thermometer.
  6. Remove from oven and let rest for 15 minutes, bringing to 160 degrees before slicing.
