Basque Chicken
This is an excellent family style dinner and
can be served simply “as is” with chicken
and sauce or with a side dish of rice.
Ingredients for 4 people:

Chicken
|
1 fryer quartered
|
Sauce Basquaise
|
1 pint
|
Olive Oil
|
2 tablespoons
|
- Over medium high heat, brown chicken in olive oil for 8 minutes on one side then 2
minutes on the other.
- Add Sauce Basquaise, cover and reduce heat to a simmer.
- Simmer 30 minutes, or until juices of chicken flow clear.
