Boiled New Potatoes or Red Potatoes
These potatoes work well for either a
simple family dinner or a formal dinner
party. Boiling them for just 10 minutes
prevents them from getting mushy.  
Leftovers may be fried for breakfast.
Ingredients for 4 people:
 
New Potatoes or Red Potatoes

Salt
1 teaspoon
Fresh Chives
1/4 cup
Butter
1 tablespoon
  1. Scrub unpeeled new red potatoes and cut in half.
  2. Bring to a boil in well-salted water.
  3. Reduce to a simmer.
  4. Simmer ONLY 10 Minutes
  5. Drain, but do not rinse.
  6. Add Chives and Butter to taste and then cover. You may substitute a very good olive oil
    for butter.
  7. Let them set for 20 - 30 minutes.
