Boiled New Potatoes or Red Potatoes
These potatoes work well for either a
simple family dinner or a formal dinner
party. Boiling them for just 10 minutes
prevents them from getting mushy.
Leftovers may be fried for breakfast.
Ingredients for 4 people:

New Potatoes or Red Potatoes
|

Salt
|
1 teaspoon
|
Fresh Chives
|
1/4 cup
|
Butter
|
1 tablespoon
|
|
- Scrub unpeeled new red potatoes and cut in half.
- Bring to a boil in well-salted water.
- Reduce to a simmer.
- Simmer ONLY 10 Minutes
- Drain, but do not rinse.
- Add Chives and Butter to taste and then cover. You may substitute a very good olive oil
for butter.
- Let them set for 20 - 30 minutes.
