Chicken Salad

Ingredients:
  Notes:
Leftover De-boned Baked Chicken
2 - 3 pounds
 
Fresh Roasted Cashews
1/2 cup coarsely chopped
 
Bread and Butter Pickles and Juice
1/2 cup chopped
 
Fresh Chives
1/2 cup chopped
 
Mayonnaise
2 heaping tablespoons
 
Dijon Mustard
3 heaping tablespoons
 
Curry Powder
2 tablespoons
 
Salt
1/2 teaspoon
 
Pepper
1/2 teaspoon
 
  1. Chop and mix chicken and cashews.
  2. Add bread and butter pickles and chives with 1/8 cup of pickle juice.
  3. In a separate bowl, combine salt, pepper, curry powder, mustard and mayonnaise.  Add to
    chicken mixture and mix well.
