Chicken Salad
This is a delicious way to
use up leftover chicken!
Ingredients:

Leftover De-boned Baked Chicken
|
2 - 3 pounds
|
|
Fresh Roasted Cashews
|
1/2 cup coarsely chopped
|
|
Bread and Butter Pickles and Juice
|
1/2 cup chopped
|
|
Fresh Chives
|
1/2 cup chopped
|
|
Mayonnaise
|
2 heaping tablespoons
|
|
Dijon Mustard
|
3 heaping tablespoons
|
|
Curry Powder
|
2 tablespoons
|
|
Salt
|
1/2 teaspoon
|
|
Pepper
|
1/2 teaspoon
|
|
|
- Chop and mix chicken and cashews.
- Add bread and butter pickles and chives with 1/8 cup of pickle juice.
- In a separate bowl, combine salt, pepper, curry powder, mustard and mayonnaise. Add to
chicken mixture and mix well.
