How to Clean Mussels
Before steaming mussels,
they should be cleaned
properly and their beards
must be removed.
  1. Begin with whole, unchipped mussels. Discard any mussel that isn't
    tightly closed and store them in a cool, ventilated area.
  2. Soak mussels in cool water for 20 minutes to permit them to expel
    sand and salt.
  3. Remove the beard, or byssal threads, which will look very much like
    seaweed, from the mussel using a paper towel or plastic gloves.
    The beard should be pulled sharply towards the hinged end of the
    mussel. If pulled incorrectly in the opposite direction, you might tear
    the mussel.
  4. As you remove the beard from each mussel, place the clean mussel
    into another bowl of clean water.
  5. Clean the mussels with a firm brush and place them into yet another
    clean bowl of water.
