| 1. Beat together egg and milk (or water) and add cheese. |
2. Sauté onions and bell pepper in olive oil over medium heat until the onions are translucent. Add beaten egg, milk and cheese mixture. |
3. Slowly cook frittata over medium low heat until edges can be lifted with a heat resistant spatula. Finish under broiler about 4 – 5 minutes until golden brown. |
