Frittata Recipe
This frittata may be served for dinner or lunch
or as an hors-d’oeuvre when cut in squares
and served with
Canned Tomato Sauce with
Roasted Red Bell Peppers.  This recipe makes
three or four servings.

Ingredients:
  Notes:
Eggs
6
 
Milk
1/4 cup
May substitute 1/8 cup of water
Grated Swiss Cheese
1/2 cup
 
Chopped Onions
1 cup
 
Chopped Red Bell Pepper
1 cup
 
Salt
1 teaspoon
 
Pepper
1 teaspoon
 
Extra Virgin Olive Oil
1 tablespoon
 
1. Beat together egg and
milk (or water) and add
cheese.
2. Sauté onions and bell
pepper in olive oil over
medium heat until the onions
are translucent.

Add beaten egg, milk and
cheese mixture.
3. Slowly cook frittata over
medium low heat until edges
can be lifted with a heat
resistant spatula. Finish
under broiler about 4 – 5
minutes until golden brown.
