Making and Canning Blueberry Jam
Blueberry Jam is magical when reheated and served over
ice cream at a dinner party. It'll turn all the guests teeth blue
and is great for a late evening last laugh!

We make most jams using the same procedure, regardless
of the fruit. Using the ingredients below, follow our
technique for
Making Jam, with a 20 minute cook time,
and then
Canning Jam.
Ingredients per 1/2 pint of jam:
 
Blueberries
1 pound per 1/2 pint jam jar        
Water
1/8 cup per 1/2 pint jam jar
Sugar
1-1/3 cup for each pound of fruit
Lemon (organic or chemical free)
1 for every three 1/2 pint jars
Other ideas:
  1. After the jam is thick enough to can, try
    turning up the highest heat setting
    possible for five to ten minutes to let it
    darken in color.
  2. A few toasted almonds are great in jam.
  3. Apricot jam is good when made with a
    little basil.
