Making and Canning Strawberry Jam
Strawberry jam can be very difficult to make because the
berries often contain a lot of water. So we don't use our
standard procedure.

Mix the ingredients, slowly bring to a rapid boil and stir
often until it jells. Cover overnight and then return to high
heat before
Canning Jam.
Ingredients per 1/2 pint of jam:
 
Strawberries - hulled
3/4 pound per 1/2 pint jam jar        
Pectin
per manufacturer's instructions
Sugar
1 cup for each pound of fruit
Lemon juice
1-1/2 tablespoons per 1/2 pint jar
Other ideas:
  1. May be made chunky by not
    chopping the berries, or
    smooth by lightly chopping
    the berries before adding
    them to the pot.
