Perch in Vodka Sauce

 

The picant sauce enhances the flavor of this delicate fish. This vodka sauce is also delicious with grilled or baked chicken.

Ingredients for 4 people :

Perch

1 pound

Tomato Sauce with Herbs

1 pint

Vodka

½ cup

Fresh Lemon Juice

¼ cup

1. Clean perch and place in a baking dish.

Broil at 450° for 4 minutes, turn and broil another 3 minutes.

2. Place Tomato Sauce with Herbs in a heavy sauce pan.

3. Add vodka and lemon juice and simmer for 10 minutes reducing to desired thickness.
