Perch in Vodka Sauce

The picant sauce enhances the flavor of this delicate fish. This vodka
sauce is also delicious with grilled or baked chicken.
Ingredients for 4
people :

Perch |
1 pound |

1 pint |
|||
|
Vodka |
½ cup |
||
|
Fresh Lemon Juice |
¼ cup |
||
|

|
1. Clean perch and place in a baking dish. Broil at 450° for 4 minutes, turn and broil another 3 minutes. |
2. Place Tomato
Sauce with Herbs in a heavy sauce pan. |
3. Add vodka and lemon juice and simmer for 10
minutes reducing to desired thickness. |
