Potato Pancakes

These are delicious and my favorite way to eat leftover mashed potatoes.

Ingredients:

Leftover Mashed Potatoes

3 cups

Egg

1

Flour

3 tablespoons

Chopped Chives

1 cup

Salt

1 teaspoon

Pepper

1 teaspoon

Frying Oil as desired

¼ cup

1. Combine all ingredients except oil.

2. Leftover mashed potatoes should be at room temperature.

3. Drop potato mixture by spoonfuls into medium hot oil. Do not flatten them; they will turn into patties when they are flipped.

4. Fry approximately 3 minutes, turn and brown the other side.

5. Plate onto a 2-ply papertowel to absorb oil.

6. Layer potato pancakes with paper towels until all mashed potatoes are fried.
