Potato Pancakes
These are delicious and my favorite way to eat leftover mashed potatoes.
Ingredients:

Leftover Mashed Potatoes |
3 cups |

|
Egg |
1 |
||
|
Flour |
3 tablespoons |
||
|
Chopped Chives |
1 cup |
||
|
Salt |
1 teaspoon |
||
|
Pepper |
1 teaspoon |
||
|
Frying Oil as desired |
¼ cup |
||
|

|
1. Combine all ingredients except oil. |
2. Leftover mashed potatoes should be at room
temperature. |
3. Drop potato mixture by spoonfuls into medium
hot oil. Do not flatten them; they will turn into patties when they are
flipped. |

|
|
|
|
4. Fry approximately 3 minutes,
turn and brown the other side. |
5. Plate onto a 2-ply papertowel to absorb oil. |
6. Layer potato pancakes with paper towels until
all mashed potatoes are fried. |
