Ravioli with Broiled
Salmon and Creamy Tomato Sauce
Good, fresh ravioli is one of my favorites! This dish may be
served with any mushroom or cheese filled ravioli as a simple family meal or
easily dressed up for company with a garnish of salmon.
Ingredients for 4 People:

Salmon Fillet about 3/4” thick |
1 pound |

1 pint |

|
1 cup |
|||
|
Ravioli |
½ pound |
|||
|
Parmesan |
½ cup |
|||
|

|
1. Prepare ingredients. Preheat
oven and broiler to 450 degrees. Bring pot of water for ravioli to a
rolling boil. |
2. Debone salmon by running fingers over the fillet. Remove bones with fingers or with a pair of tweezers. Broil for 7 minutes. |
3. Bring Tomato
Sauce with Herbs to a simmer. Place ravioli in boiling water and cook for 5 minutes. |

4. Stir crème fraîche into the tomato sauce. |
5. Pour tomato sauce over
ravioli and serve with salmon and parmesan on the side or plate the meal,
restaurant style. |
