Risotto, Asparagus and Roasted Almonds

This is a variation of the Basic Risotto Recipe.

Ingredients :

Basic Risotto Recipe

1

Leftover Roasted Asparagus

1 cup

Roasted Whole Almonds

½ cup

1. Arrange ingredients for both Basic Risotto and those listed above.

Prepare Basic Risotto Recipe.

2. Add butter and parmesan from the Basic Risotto recipe at the same time as the asparagus and almonds.

Cover and let it rest for 5 minutes.

3. Gently fold everything together and serve immediately.

You may wish to serve it with shaved parmesan as pictured above.
