Roasted Asparagus Quiche
This is an absolute must when

Ingredients:
  Notes:
Pie Crust
1
 
Large Fresh Eggs
5
 
Roasted Asparagus
1 bunch
 
Milk
1-1/4 cups
 
Shredded Swiss Cheese
1/22 cup
 
Salt
1/2 teaspoon
 
Pepper
1/2 teaspoon
 
1. We prefer home made pastry,
but if time is at a premium,
buying ready made piecrust is
quick and easy.
2. It is important to prebake the
crust! If you don’t, it will be
soggy. We recommend
preparing the filling while the
crust is in the oven.
3. Preheat oven to 425
degrees.  Line crust with wax
paper and add ceramic pie
weights, dried beans or rice.

Bake 25 – 35 minutes until
golden brown.
4. Remove the crust from the
oven.  Reduce  oven
temperature to 375 degrees.   
Cut Roasted Asparagus into 1/2"
lengths.  Beat eggs, milk, salt and
pepper with a fork.
5. Place asparagus evenly in the
bottom of the baked crust.
6. Add grated cheese then pour
in the beaten eggs.  

Bake at 375 degrees for 30 –
35 minutes until browned on top.
