Cod, Tomato and Avocado Soup

an impressive starter as shown.

Ingredients; dinner for 4 or starter for 8:
  Notes:
Cod
1 pound
 
Tomato Sauce with Roasted Red Bell Peppers
1 pint
 
Avocado
1 whole
 
Milk or Cream
1/2 cup
 
  1. Bring Tomato Sauce with Roasted Red Bell Peppers to a simmer in a heavy saucepan.
  2. Preheat broiler to 450°. Place fish in roasting pan or dish and broil for 4 minutes. Turn the
    fish and broil for 4 minutes longer.
  3. Add milk to tomato sauce and continue simmering until ready to serve. Meanwhile cut
    avocado in half then into slices. See Guacamole recipe for how to cut an avocado.
  4. Remove fish from oven and cut with a spoon into serving portions.
  5. To assemble, lay fish and avocado slices over sauce in a bowl.
