Spanish Omelet or Spanish Tortilla Recipe
This traditional Spanish omelet is
an unusual variation of a regular
omelet.  It may be served for
dinner or as a starter.  To present
as an hors-d’œuvre, cut it into
squares and serve with toothpicks.
Ingredients for 4 people:

Fresh Eggs
5 large
 
Milk
1/4 cup
 
Extra Virgin Olive Oil
1/4 cup
 
Potatoes
8 small quartered
 
Grated Swiss Cheese (Optional)
1/2 cup
 
Salt
1/4 teaspoon
 
Pepper
1/4 teaspoon
 
1. Over medium heat, slowly sauté potatoes with
salt and pepper in olive oil for approximately 15
minutes, until they are cooked but not browned.

Meanwhile, preheat the oven broiler.
2. Spread Sauce Basquaise evenly over the
potatoes.
3. Beat eggs and milk.  Mix in the cheese and
pour over potatoes and
Sauce Basquaise.

Cook the eggs for approx. 8 minutes, until the
bottom is brown.
4.  Place skillet under the broiler for
approximately 4 minutes or until omelet turns
golden brown.
