| 1. Over medium heat, slowly sauté potatoes with salt and pepper in olive oil for approximately 15 minutes, until they are cooked but not browned. Meanwhile, preheat the oven broiler. |
2. Spread Sauce Basquaise evenly over the potatoes. |

| 3. Beat eggs and milk. Mix in the cheese and pour over potatoes and Sauce Basquaise. Cook the eggs for approx. 8 minutes, until the bottom is brown. |
4. Place skillet under the broiler for approximately 4 minutes or until omelet turns golden brown. |
