Vodka Cream Tomato Sauce with
Grilled Chicken Pasta

This vodka sauce can be made with or without the milk or cream. It is wonderful
served over any white fish and rice.
Ingredients for 4 people:

Chicken Breast |

Olive Oil |
1 Tablespoon |

½ pint |
|

*Vodka |
½ Cup |
|
Milk or cream |
¼ Cup |
|
Fresh Pasta |
1 pound |
|
|

|
1. Simmer Tomato
Sauce with Herbs and vodka until liquid is
completely reduced. |
2. Add milk or cream and turn off the heat. |

3. Baste Chicken Breasts in Olive Oil. Heat
grill pan or skillet on the highest heat possible until it smokes. Cook smaller breasts exactly 3 minutes per side and large breasts
exactly 4 minutes per side. Remove from heat and let sit 10 minutes. Slice diagonally. |
4. Cook pasta in boiling salted water until
done. Drain. Add chicken and sauce and toss. |
*Variation: substitute tequila and marinade chicken in lime juice one
hour before grilling.
